Newport Pig Cookin' Contest – Kcbs Great American Bbq Tour

The first stop on the Kansas City Barbeque Society Great American BBQ Tour has been announced and the Newport Pig Cookin' Contest is the first of over two dozen stops throughout the country where cooks state-wide will be competing for cash prizes.

Jim Bristle, President of Newport Pig Cookin' said, "KCBS is the leading barbecue organization in the world, and for them to choose Newport Pig Cookin' really puts us on the barbecue world map."

KCBS recently announced the schedule for the 2010 KCBS Great American BBQ Tour.

During the many stops on this country-wide BBQ event, Mike and Chris Peters will be doing presentations where they will be sharing their knowledge and love of their food, as well as providing grilling advice and food samples for attendees.

The presentations will also include a feature where two of the audience will be picked to take part in a Grill Master cook-off, where they will be cooking chicken with a selection of the events sponsors seasonings; including KC Masterpiece or Weber Seasonings and Kingsford Charcoal.

Using the official cooker of the tour, Good-One Smokers/Grills, as well as the tour's official grilling accessory, GrillGrates, the participants are judged by the audience on the KCBS standards of appearance, taste and texture.

Available over the two day event, there will be concession stands, rides for adults and children, arts and crafts, bake sales, funnel cakes, souvenirs as well as a great deal of music to enjoy.

Admission to the Newport Pig Cookin' Contest is free, and plates of barbecue run at $6 a head with serving starting from 11am, and bulk pork, when available, will be sold at a price of $6 per pound, though stocks may be outstripped by demand from attendees.

2010 marks the 32nd annual Newport Pig Cookin' Contest and is scheduled to take place on April 9-10 at the Newport Community Park where over 80 BBQ'ers will be cooking up the best whole pig and competing for cash prizes.

Barbecue Pizza

Fire ovens make the best pizza not doubt about it. A barbecue can create the same fire concept and you can have perfect pizza every time.

Once you have tried barbecued pizza done the right way take out will be a thing of the past.

Preparation

Create your pizza dough as you would normally and roll it out into a circle. Get the radius size slightly smaller than the grill grid of your barbecue. Try getting the dough rolled out as even as possible and about half a centimeter thick. Anything thinner you run the risk of it breaking up as you are grilling and no thicker otherwise you might not cook the dough properly.

Place on your normal toppings like cheese, tomato sauce, ham and peppers. Ingredients like mushrooms and chicken will need to be pre-cooked before being placed on the pizza.

Barbecuing

Pre-heat the grill to a medium heat and lightly oil the grill grid. Place the pizza on the grill and close the lid. With grilling pizza you want to great an oven effect and almost bake the pizza with the fire.

Grilling time is 10 - 15 minutes depending on the heat of the grill and the size of the pizza. It is done when the ends are slightly brown and the cheese is completely melted.

If you don't want grill grid marks on the bottom of the pizza you can place two clean bricks on the grill grid and the pizza on the bricks.

Once you have tried how it easy and how delicious barbecue pizza is you will be having it more and more.

Charcoal Briquette Manufacturing Is Environmentally Friendly

It's interesting to note that before Henry Ford made the BBQ grill popular by link selling it to his cars with the vision of day trips and pic-nics, charcoal was nothing but a waste product left over from the recovery of acetic acid and methanol. In the early 1900's after more efficient and less expensive methods were developed for synthesizing acetic acid and methanol, charcoal production declined only to be revitalized by the development of the briquette for recreational cooking.

Converted to mass production by Ford in the 1920's charcoal briquettes are made of two primary ingredients, one of which is basically traditional lump wood charcoal referred to a char. It is added to give the briquette its wood smoke aroma and also because it's easy to ignite. The other not surprisingly is coal or anthracite which is added to produce a high temperature and long lasting fire.

Ash whitening agent is added to let the chef know when the BBQ is ready to cook on (and still people burn their food by not being sufficiently patient!) The final ingredients are a starch binding agent and an accelerant.

The first steps in the manufacturing of briquettes are to prepare both the char and the coal and this is done by different methods of controlled burning that drive off the moisture and volatile components. Once complete the finished products are pulverized ready for blending.

To make the briquette, the char and the coal is mixed in the correct proportions with the starch binder and fed into a blender where it is thoroughly mixed. Despite having been desiccated, the mix still has significant water content and this is necessary to help form the briquettes.

The briquettes are formed and dropped on a conveyor where they pass through a further drying process but being heated up from 40°C to 135°C for approximately four hours. During this process the moisture content of the briquette will reduce from about 35% to 5% and at the end they will either be stored or pass directly through to an on line bagging machine.

It depends on the final product specification but it's at the bagging stage that organic solvent may be added (using an atomizer) just before bagging and this produces instant light briquettes. Usually these are put into smaller paper bags so that the barbecue enthusiast can simply pick up an individually wrapped pack and light the paper without having to remove the briquettes from the bag.

Because of the use of fossil fuel in the manufacture of briquettes and the various heat drying processes involved it's arguable that lump wood charcoal is more environmentally friendly however two points have to be borne in mind.

The first is that the drying process drives off volatile gases and these gases can be used to fuel the driers themselves. Whether this is completely sustainable I would doubt however the modern briquette manufacturers do take the environment seriously and now manufacture their char from wood shavings and sawdust i.e. the waste products of the lumber industry.

So whether your choice is lump wood or briquettes not only can you claim to be a traditionalist, you can also be content in the knowledge that you're more environmentally friendly than your gas grilling neighbor. Well at least you'll know your facts and can argue the point!

The Hibachi grill is one of the lesser known types of barbecue when compared against the likes of leading manufacturers portable grills such as the Weber Smokey Mountain, the Cobb and the Cadac's of this World, and it is safe to say that its age has definitely not affected its popularity as a portable grill solution.

Japanese in origin, the Hibachi actually originated in Japan as a type of brazier that was used by nobles as far back as the 6th century. Back then, Hibachi's were commonly made from clay that was lined with wood, and as such was a functional and reasonably durable piece of cooking equipment.

These days, the Hibachi design has grown in popularity and these days is commonly made from cast-iron, using charcoal as fuel to provide a traditional style of cooking that is commonly used in contemporary barbecue grills.

Just like its modern counterparts, the Hibachi grill is produced by many difference manufacturers and is available in various sizes and configurations to suit different needs, and despite is ancient origins, performs just as well making the Hibachi a very popular type of grill to cook on thanks to it's direct cooking and portability.

The Hibachi is unique in many ways and will appeal to many people for a variety of reasons. One of the finest things about the Hibachi is the way that it is capable of cooking food just as well as many good quality grills that cost several hundred pounds as well as being an attractive focal point where ever it is used.
